Some recipes are for shock and awe. This one’s for convenience and taste. But hey, we’ve all been there- you’re driving home from work and all you want is a big fat Taco Hell burrito with no beans and extra baja sauce with a Dr. Pepper. Or is that just me…. Anyway, here’s a quickie to throw together.
(And by the way, I post things like this not to blow your mind with incredible ideas, but rather to prove that healthy food does not have to be complicated…especially for you bachelors who whine about not being able to cook. You know who you are… )
So get a pan that can go in the oven, whether glass or cast iron, doesn’t matter. Cut up some veggies- whatever you have in the fridge. I had onion, bell pepper and mushrooms.
Then a handful of spinach, tomatoes, garlic, and pre-cooked chicken. You could saute it beforehand, used weird canned chicken, or do what I did and cook some Blue Collar Baked Chicken. Pour some balsamic vinegar on top and a tiny bit of olive oil. Cook in a preheated 400* oven for about 15 minutes or so till everyone’s happy, it’s all mixed together, and you’re in your jammies.
May not be the most beautiful dish you’ve ever seen, but it was very tasty and quick! Feel free to serve it over quinoa, brown rice, wheat pasta, or eat it like I did with nothing extra at all. Enjoy!

Looks really good! I'm going to have to try that blue collar baked chicken and make this one of these days.
