For this recipe I used some chicken from my Blue Collar Baked Chicken recipe I posted a few weeks ago. You don’t have to make this chicken for this recipe, but that’s what I’m basing price on. This is a great little dish to throw together at the end of a long day when all you want to do is just eat and get it over with. Fortunately for you, however, it’s extremely tasty!
If you’re starting from raw chicken, chop it up and put it in a greased hot pan. Add a handful of rough chopped onions and green peppers until they’re cooked to your liking. If you’re feeling extraordinarily lazy or don’t have time, you can use canned or already cooked chicken. In this case, start by cooking the peppers and onions first then add already prepared chicken later in the process.
Feel free to add all the veggies and spices you want! I chose to use curry powder, cumin, hot sauce and garlic powder. By the way, Sauer’s curry is amazing and you can get it at Wal-Mart. Let it cook for a few more minutes. You may need to add a bit of water if it’s very dry. Once it comes together and smells great, just throw it on a tortilla and call it a day!
