I’m excited to tell you about what I had for dinner tonight. It was really good. I used to hate mushrooms and I’m so thankful I love them now because without them, this dish just wouldn’t be the same.

Cut up some onion and toss it in a hot, greased pan along with some salt.

Add a handful of mushrooms, zucchini, garlic, and whatever other veggies you prefer.

Make a little room on the dance floor and put some slices of cut up chicken in the middle.

Put a very hearty splash of balsamic vinegar (and maybe a little red wine if you’ve got it handy). This deglazes the pan and gets all that yummy stuff off of the bottom of your pan and into the dance floor.

After about 10 minutes or so, your veggies and chicken will have cooked through and the balsamic vinegar will have turned into a thick, sweet, glaze. While you’re waiting for it to cook, go ahead and clean up your kitchen so you don’t have to worry about it after your yummy meal!

At this stage, throw in some fresh spinach. ‘Cause, why not?

You can serve the dish with totally cooked spinach, but I prefer partially wilted spinach after maybe 60 seconds of cooking. It keeps its’ color and neutral flavor this way.

You’re welcome to serve this over rice, potatoes, or another starch. I personally was completely stuffed after having this and didn’t need a starch at all. MMMM it was so good and easy you guys. I hope you enjoy it!
