If I had a grill, this would’ve been so much better. But it’s all good. I’ve been trying to stay away from bread, hence the bun-less burger, but feel free to make your own with the bun.
Start by chopping up 1/2 medium onion or one small onion and putting it in a nonstick pan with salt and olive oil. I’d probably put at least 1/2 tablespoon of oil in.
Real caramelized onions take like 45-60 minutes to cook right, but I definitely didn’t feel like waiting that long. So here’s a way to break down the onions faster. Add a few tablespoons of water and make sure you put salt in.
Then cover it. Cook on medium-medium high heat. If you hear or smell that they’re burning, just add a few more tablespoons of water. Yeah, I know this isn’t the right way to caramelize but whatever.
While that’s cooking, go ahead and prepare your turkey meat.
And add the spices you want. I added salt, ground pepper, basil, rosemary, marjoram, cayenne pepper, red pepper flakes, and probably some more.
Slice open the avocado, throw away the seed, and squeeze the avocado out right into the bowl. Don’t bother with the slicing thing for this. Also, try to let the avocado sit out a few hours or overnight. Mushing it together when it’s cold makes it a lot more difficult.
Then add guacamole ingredients: a little bit of chopped tomatoes, a tiny bit of red onion, lime juice, fresh mashed garlic, lime juice, cumin, salt and pepper.
Then mix.
By now your onions should look something like this.
As you can see, 1/2 medium onion turns into not very much once it’s caramelized.
So I divided 1 lb. of turkey meat into 4 portions, then cut those portions in half. Flatten out each half.
Top with the caramelized onions but try to put it mostly towards the center. Don’t worry, it’ll even out later.
Then put the other half on top.
Then make it all purty.
Carefully slide it off the cutting board with your chef’s knife and drop it in a hot, oiled, non-stick pan.
While that’s cooking, chop up a handful of spinach and put it on your serving plate.
Then the burger…
Then a big honking slice of tomato.
Then your guacamole. You can skip the feta if you want, but it really threw some nice, bold flavor in with everything else that has a little more subdued flavor. Enjoy!

Dr. Logan, thanks for the comment! See, for me, meatloaf is like a whole different piece of art… if you can call a big wad of animal flesh art… but yeah I get what you're saying. Burgers usually imply buns and fat. I sure wish I had a grill. This dish could've been so much better!
