Here’s a painfully easy little ditty for those nights you get home from work and just want a nice, simple, homestyle meal without any fancy flavors. Don’t get me wrong, it was super tasty and tasted like something my grandmother would make for me.

So cut up about 1/2 small onion and start boiling your orzo (or other pasta of your choice).

Throw the onions and a nice pinch of salt on a heated, greased dance floor and wait till they turn golden brown.

Throw in a cut up chicken breast and let that cook until the outsides of the chicken just turn a little brown. When that happens, add a few cloves of garlic. If I had mushrooms I would have put them in now but I didn’t.

Put a tiny bit of flour in the mixture, maybe a teaspoon, and mix around. Then slowly add chicken broth till it thickens. If you don’t have chicken broth, use beef or vegetable broth. How much broth? You’re serving 2 people here so it would be about a cup or more. You’ll know when you’ve added too much. IF you’ve added too much, it’s okay. Just keep cooking it till it thickens.

Stir for about 5 minutes more or less until it thickens to your liking.

By this time your orzo should be done. Taste to see if it needs salt, then place the sauce on top of the orzo and enjoy! Super easy, anyone can do it.
