Pecans are kind of a love – hate thing for me. Something happens to the flavor/texture for me when I grind up the pecans in small pieces though, and I suddenly love them. Here’s an interesting way to serve chicken breasts when you have no idea what else to do with them! Real simple…
On a plate, pour out some finely chopped pecans and a generous pinch of salt. About 1/4 cup per large chicken breast.
Wash off the chicken first, then simply cover it with the pecans.
Drizzle some olive oil on a cookie sheet, place the chicken down, then drizzle a little more on top.
Bake it at 400* for roughly 15 minutes. You’ll know when it’s done when the pecans start to darken…or better yet, a meat thermometer will let ya’ know. Don’t overcook! Serve over whatever you want and enjoy!
