So I really prefer to not use pre-made ingredients such as Ro*Tel, but I happened to be given one of these cans so I needed to find a way to use it. In the ingredients you’ll see that it’s mainly just chopped tomatoes and green chilies, so I didn’t feel like I was cheating too much! This was a very tasty and hearty meal that serves about 2 and takes about 30 minutes from start to finish.
Cut up 1/2 onion and a chicken breast.
Throw it all in a heated, greased pan and cook on medium high heat. Throw some salt up in there.
Keep on cooking till the onions start to sweat and turn color.
Put in 1/2 can of tomato paste, about a cup of water, and a can of Ro*Tel. By the way, you don’t have to use Ro*Tel if you prefer to not have any spice to it. Just put in diced tomatoes if you prefer.
You’re going to cook this for about 20 minutes, more or less until it starts to look something like the picture below. It should be nice and thick. If the liquid is cooking down too quickly, just add more chicken stock or water. About halfway through the cooking process, add your spices. I just added salt, cumin, lots of garlic, and curry powder. Add any veggies you want- this was all I had….or spices you want, but be aware that the Ro*Tel is already a little spicy. Taste before you serve!
Add to a bed of rice and top with parsley or cilantro if you have it. Yum! Super simple.
