So you may be thinking, “Ok, salmon, eggs and rice. Gross. She must not have any groceries!” Well, you’re right about one thing, I don’t have any more groceries, BUT I did put these things together for a reason….cause they’re awesome. Back in high school my Japanese friend and I used to eat something kinda similar to this in the mornings. Yum.

So start by putting some salmon in a hot, greased pan. And no, this is obviously not the best quality salmon but hey, yo soy poor.

Break up the salmon if you want to cook a bit faster. Once the salmon starts getting light pink, add a few cloves of chopped garlic.

If you have some of that sauce from the orange chicken feel free to use that. I just put in a nice amount of soy sauce, lemon juice, onion powder, lots of cayenne pepper and ginger. Toss salmon till the liquid has mostly evaporated and the soy has darkened the salmon. Feel free to add veggies here, but honestly, I didn’t have any left. I know, bad girl.

Go ahead and plate your prepared rice and put the salmon on top. In the heated, greased pan, add one egg. Feel free to make these scrambled, but I prefer over medium eggs (they’re quite difficult to perfect so I feel a challenge every time I make it).

It looks weird indeed, but it’s surprisingly tasty! YUM. I want it again.
