So here’s what happened. I found this cool Greek yogurt covered frozen blueberries idea on Pinterest and of course, they’re beautiful and perfect on Pinterest.
Well, that didn’t happened.
First, apparently these berries are supposed to be frozen for an hour. I forgot about them for 2 days. So when I got them out tonight, they were crusty and weird looking. They were also awkward to bite, the fruit was too tart, and the yogurt which I had sweetened with sugar was definitely not sweet enough.
I almost got pretty ticked cause I had spent like $5 on flippin’ raspberries and blueberries. I rolled one around in my hands and saw that the weird crusty dust fell off. I had to try again.
So this time I added plenty of Agave nectar to the yogurt to make it sweet enough. But I was still bothered by the awkward frozen texture. So I grabbed a bag of coconut and rolled the newly-dipped berries in coconut.
I popped them in the freezer and an hour later, they were DELICIOUS. The sweeter 2nd layer of yogurt was perfectly sweet, while the texture of the coconut helped cut through the frozen berry.
So, the next time you try to dip your berries in yogurt for a nice summer snack and they look like crap, re-dip them and dredge in coconut!

True, Sarah! Another update… my friend and I ate half of the serving of these things right out of the freezer and they were really good. But THEN we let them sit for about 20 minutes and they were almost falling apart. We tasted them and they were even better! Almost like the consistency of coconut cream pie. SO GOOD.
Good save! I have had trouble with frozen berries’ texture too. Usually they have to end up in a smoothie if they get like that. This looks great for summer!
