Here’s a great “I’m Starving!” meal to throw together for just yourself or for the whole family. If you have a thick spaghetti or yaki soba noodles you can use that to look a little more like real lo mein, but I used whatever pasta I had, which was penne whole wheat. This is a cheap meal, but use the pasta in moderation or it could get unhealthy pretty quickly.

Start by cutting up 1/2 piece of chicken and a little bit of vegetables. I used onions, peppers, carrots (chopped very small) and asparagus because I needed to use those up.

In a heated, greased nonstick pan, add everything on your chopping block. Yep, everything, just throw it right in there.

Cook just until the chicken is no longer pink and there is a little color on the veggies.

Add some cooked pasta into the pan, enough for however many people you’re cooking for.

Remember that sauce we made for orange chicken? If you have any leftover, put a few tablespoons in the pan. If you don’t have that sauce and want something really simple, you can just use soy sauce, garlic and ginger. Check out this recipe for the actual ingredients I used though, it’s pretty good.

Add a few chopped mushrooms and stir it all together on fairly high heat. You’ll see the pasta turn brown because of the sauce.

Keep on cooking for at least another 5 minutes on pretty high heat. Basically you want to cook it until right before it starts to burn, till the pasta becomes very dark. Taste before you serve and make sure it’s salty enough. One nice thing about cooking with this penne is that the pasta is firm and doesn’t fall apart when you stir, flip and cook it.

Awww yeah, doesn’t look particularly amazing but the taste was great. The sauce is really important, so if you have a minute, really try to make the sauce from that orange chicken we made before. These portions can serve two people.
