After dreaming I was an assisting surgical nurse for Jack Shephard from Lost last night, my first thought when I woke up this morning was, “I want some pancakes.” (Welcome to my world.) While searching for recipes, I came across flaxseed pancake recipes. I remembered my Slovak friend had given me a bag of unidentified seeds and realized that those seeds were indeed flaxseed! She also gave me a bag of buckwheat, which I had seen before in pancake recipes.

So, lucky me, I found this amazing recipe on FlaxMatters.com. I started taking pictures and changing the recipe to be different, but then I realized that it was too close to the original to say it was my own. So I’m sharing an EXCELLENT recipe that’s not my own, but I do want to tell you a few things about it.

These ARE flaxseeds, right? Man, that’d be embarrassing. Look, I’ve never used this stuff before either- don’t be scared. If you don’t want to buy a big bag of this stuff, go to your local health food/whole food store and buy it in bulk- meaning you can buy just a little bit at a time. Anyway, clean out a coffee grinder or mini-grinder and put two tablespoons in there.

Then get some buckwheat (this IS buckwheat, right? I’m new at all this). Put two tablespoons in a grinder…

…till it turns to powder like this.

Add the buckwheat and flaxseed powder to the recipe. I pretty much followed this recipe but changed some things too. I cut the sugar in half, used a little less milk, used olive oil instead of butter, and used a lot more spices. I used a good amount of cinnamon, nutmeg, clove, and a pinch of ginger. I also added a little bit of molasses for depth and color. I didn’t really measure the apple either- I just grabbed one apple and grated it right into the bowl until I got to the core, peel included.

I can say this because it’s not really my recipe- but these are some of the most memorable pancakes I’ve ever had. So much flavor you guys, and relatively healthy, compared to other pancake recipes. One roommate had it with honey, while the other with syrup, while the other had nothing extra on it. Hope you enjoy!

    Living on Less Money, I only used a few tablespoons because I was only making a few for myself, so I’m not sure. KellyAnne, thanks for the heads up! Looks like FlaxMatters.com is now some other site.

    I didn’t follow their instructions to a T though. Look at the ingredients listed at the bottom- should be “1 Cup o’ flour, 2 eggs, 1 Cup o’ milk, 1 apple, plus the flaxseed & Buckweat.”

    I'd like to try these. Did you use 1 1/2 cups of buckwheat? I only saw 2 tablespoons mentioned but then the recipe calls for 1 1/2 cups.

    Hi Andy. I am glad you like that flax seeds. Come over for diner sometimes I have much more for your. Great reciepy. I have to try it.
    I always got my bulk in Earth Fare in Ballantyne. Great store and it is really reasonable for all the bulk stuff. Have great weekend.
