Some people say that if you got stuck on a desert island, the only food you’d need to survive are sweet potatoes. Other organizations are trying to work on planting sweet potatoes around the world in impoverished countries where crops frequently die due to the weather. Not only are they fairly easy to grow in poor soil but, obviously, the health benefits are off the chart.

 I don’t know about you but most of the time I’m not in the mood to sit down to a huge massive sweet potato without a junk load of butter and brown sugar. Seeing as that pretty much takes away all nutritional benefits, I decided to make a potato into fries so it’s a tad more interesting. They were amazing!

So first, make sure you have a sharp knife. A dull knife is a dangerous knife! Also, don’t peel the potato- the skins are the best part. Oh, and preheat your oven to like 450* or so. So first cut the potato in half.

Then carefully cut those pieces in half again.

Then cut those pieces in half horizontally and chop them in a “fry” shape.

Put the pieces on a pan and drizzle with olive oil and whatever spices you want. I put salt, cinnamon and yes, a little bit of cayenne pepper on top. The pepper gives it a little kick at the end. Anyway, put whatever you want on it. Make sure to toss everything together so it’s all evenly spread out. Don’t overcrowd the pan, that’s important.

Cook for about 15 minutes or so till they’re tender (but not mushy) and golden brown. Serve with just about anything (or by itself) for a fantastic meal!
