Life is so much better when you’re not picky about food! Used to hate mushrooms, now I love them. If you love mushrooms, this soup is for YOU.
This recipe makes about 4 bowls. Start with finely dicing an onion. I had red onions but use what you’d like.
Then mince a few cloves of garlic.
Add the onions and garlic to a heated, greased pot with a big pinch of salt.
Finely slice a whole package of mushrooms while the onions are cooking.
Once the onions start to get a bit of color on them, add the mushrooms and gently stir.
Almost immediately add roughly 3-4 cups of beef, chicken or veggie stock- your choice.
Once the liquid heats up, add about a cup of dry cous cous.
After about 10 minutes or so, the cous cous will puff up and cook. Depending on how “soupy” or thick you want it, add more water OR continue cooking and let the liquid cook down a little. Keep in mind that the couscous will soak up the liquid like crazy and give the soup a really nice thickness to it.
And voila!
